When it’s Girl Scout cookie time, my eyes dilate like a cat about to bitch-slap a ball of yarn and I froth at the mouth until my cookie lust is satiated.
So needless to say, when I saw that there are Thin Mint Ice Cream Bars available to devour, I may have had a mini-heart attack. Now, you may be saying to yourself, “Shannon, you’re overreacting. There’s already Thin Mints ice cream out there in the world, go dine upon it and be merry.”

No. I don’t want ice cream that I have to dish out of a tub… and I only do that if I’m feeling civilized. That gives me both a spoon AND bowl that I’ll have to clean. Instead (and apparently since the end of February), we have the glorious ice cream sandwiches that we can stuff into our mouths, with no dishes to worry about! So far people have said that these are the most authentic to the cookie, which makes sense as some of the cookie is embedded in the sandwich.

Girl Scout cookie season has come to an end, but thanks to Good Humor (BLESS THEM), we can get a delicious dose of Thin Mints year-round. You can find them at both Target and Shop-Rite for now, but if these become popular enough they could end up in more stores. Let’s make that a reality, PopWrappers!
